| The
chocolate bar that I purchased has white
spots on the surface? Why does this
happen?
When chocolate has undergone prolonged
exposure to heat, it results in discolouration
of the surface. This is caused by the
separation of the cocoa butter oils,
which solidify giving it a white appearance.
Slight heat exposure does not normally
affect the flavour or characteristics
of the chocolate.
