| The
chocolate bar that I purchased has white
spots on the surface? Why does this
happen?
When chocolate has undergone prolonged
exposure to heat and subsequent cooling
it results in discolouration of the
surface. This is caused by the separation
of the cocoa butter, which solidifies
on the surface giving it a white appearance.
